On March 23rd, Blue Corn Brewery (Southside location) will be hosting a small Cask Festival, with six different Santa Fe breweries pouring a special cask, made just for the event. Blue Corn Brewery, Rowley’s Farmhouse Ales, Santa Fe Brewing, Chili Line, Duel, and Second Street will all be participating. We will also be serving small bites to pair with the beer:
Fried avocado topped with pico de gallo and a jalapeno-cilantro aioli
Cauliflower wings served with bleu cheese and hot sauce
Deep fried goat cheese-stuffed jalapeno poppers
Short rib wonton mini tostadas
Salmon mousse mini crackers

Chef D had a vision of creating special events that would bring in guests who appreciate great beer and food. His idea was to host everyone at one large table so they could enjoy meeting new people and grow their personal circle of community at the same time.
We thoroughly enjoy having in a range of people who like to come together in a comfortable, welcoming environment to partake in great beer, diverse food, and, of course, wonderful companionship. We work to create seasonably appropriate pairings that highlight local products, growers, and businesses. When Chef D works on a theme or a menu for a dinner, he starts with the beer; he and Paul discuss what beers he is working on and what their profiles are. He then finds inspiration from current food trends to develop flavors that will compliment and contrast Paul’s beers.
