Blue Corn Brewery opened in 1997. It is a favorite of both locals and visitors. Our varied menu of New Mexican specialties and contemporary comfort food is made fresh from scratch daily. Our chef is passionate about using locally-grown and seasonally-appropriate foods and is a fervent supporter of local growers and producers. He has incorporated many New Mexico-raised foods into the menu at Blue Corn including beef, pork, organically produced cheeses, produce, breads and tortillas. In a further effort to take Blue Corn green, he instituted a recycling and composting program, reducing the restaurant’s landfill waste by half.
We have an onsite brewery that produces award winning, handcrafted beers. Our Head Brewer, James Warren uses the finest ingredients from around the world to make a wide variety of ales and lagers.
